1 1/2 each  medium cucumber
3 cup  cold water
1 tsp  kosher salt
2 tbsp  sugar
2 tbsp  white wine vinegar
  1. In large bowl, mix cucumbers, salt, sugar, and vinegar.
  2. Using potato masher, crush cucumbers until wilted. Let rest for 10 minutes.
  3. Mix in 3 cups of water. Drain through seive. Lightly press to discard extra liquid.
