1 1/2 each  medium cucumber
1 tsp  kosher salt
2 tbsp  sugar
2 tbsp  white wine vinegar
3 cup  cold water
  1. Peel and finely mince cucumber.
  2. In food processor, fitted with steel blade, add cucumber, salt, sugar, and vinegar. Purée until smooth, about 1 minute. Let mixture rest for 10 minutes.
  3. Add 3 cups of water. Stir, then drain through seive. Lightly press to discard extra liquid.
  4. Transfer to serving bowl.
