20 oz  frozen chopped spinach
2 cup  Cottage Cheese, fat free, small curd
0.3333 cup  reduced fat grated parmesan cheese
1 1/2 tsp  dried basil
0 1/4 tsp  ground nutmeg
1 pinch  salt
1 pinch  black pepper
3 each  eggs
12 piece  Pasta, lasagna, semolina, extra wide, dry
1 each  cooking spray
0 1/4 cup  white all purpose flour
2 cup  fat free milk
2 tbsp  margarine
1 pinch  ground cayenne (red pepper)
1 pinch  white pepper
0.3333 cup  plain croutons
1 pinch  chopped parsley
  1. Preheat oven to 350 degrees.
  2. Combine spinach, cottage and Parmesan cheeses, basil, and nutmeg in a large bowl. Sprinkle with salt and pepper. Mix in eggs.
  3. Slice cooked lasagna noodles in half crosswise. Spoon 2 tablespoons of cheese mixture onto each noodle half. Roll up.
  4. Arrange, seam side down in a cooking spray coated baking pan.
  5. Stir together flour and milk in a small pot. Let boil, whisking continually until thick, about 1 minute.
  6. Take mixture off of heat and mix in margarine, salt, cayenne, and white pepper. Spoon sauce over noodles. Top with croutons.
  7. Bake for 30 minutes. Sprinkle with parsley.
