1 1/2 cup  frozen sweet corn kernels
1 cup  fresh chopped celery
1 cup  chopped red bell peppers
1 cup  fresh chopped onion
0.3333 cup  brown sugar
1 cup  cider vinegar
2 tbsp  dijon mustard
2 each  medium garlic cloves
1 each  red hot chile peppers
  1. Combine the corn, celery, bell peppers, red onions, brown sugar, vinegar, mustard, garlic, and chile, if using, in a saucepan.
  2. Bring to a boil on high heat, then reduce the heat and simmer for 15 minutes, or longer if desired.
  3. Serve at room temperature.
