1 tbsp  olive oil
2 each  medium garlic cloves
1 tbsp  fresh lemon juice
2 tbsp  chopped parsley
0 1/2 cup  chopped scallions
1 tsp  fresh mint
0 1/2 tsp  ground thyme
1 pinch  salt
0 1/4 tsp  black pepper
1 1/2 lb  sliced zucchini
1 each  medium tomatoes
  1. Preheat broiler. Cover baking sheet with foil.
  2. In large bowl, whisk together olive oil, garlic, lemon juice, parsley, scallions, mint, thyme, salt, and pepper.
  3. Cut zucchini lengthwise into quarters, then cut quarters into 1/2" slices. Cut tomatoes into 1/2" pieces.
  4. Add zucchini and tomatoes to olive oil mixture. Toss to coat evenly. Spread vegetables on baking sheet. Broil 8-10 minutes, until zucchini is just tender. Serve immediately.
