1 lb  Beef, top loin, strip steak, lean, raw, prime, 1/4" trim
0 1/4 cup  white all purpose flour
0.125 tsp  black pepper
2 tbsp  Oil, canola
0 1/2 cup  fresh chopped onion
1 each  medium garlic cloves
0 1/4 tsp  fresh thyme
0 1/4 tsp  dried basil
0 1/4 tsp  ground oregano
0.125 tsp  dried rosemary
1 tbsp  chopped parsley
0 1/2 cup  red wine
1 cup  cold water
2 cup  chopped tomato
2 cup  chopped carrots
2 cup  fresh mushroom slices
3 cup  Potatoes, fresh, with skin, diced
  1. Coat beef with flour and pepper, and brown in hot oil.
  2. Add onion and garlic, then cook until tender. Pour off fat. Add all spices, wine and water.
  3. Cover and simmer for 30 minutes, stirring occasionally, adding more water if necessary.
  4. Add tomatoes, carrots, mushrooms, and potatoes, simmer 1 more hour.
