1 tsp  olive oil
2 1/2 cup  fresh chopped onion
1 tbsp  minced garlic
1 tsp  oregano leaves
1 tsp  salt
2 1/2 cup  chopped tomato
2 each  medium potatoes
1 1/4 lb  fresh green beans
0 1/4 cup  chopped parsley
0 3/4 cup  crumbled feta cheese
0 1/4 cup  fresh lemon juice
  1. In large stock pot, heat oil over medium. Add onions and garlic. Sauté on low heat for 10 minutes, until onions are translucent, stirring often to prevent sticking.
  2. Add oregano, salt, tomatoes, potatoes, and beans. Cover and simmer for about 20 minutes, until potatoes and beans are tender.
  3. Just before serving, add parsley, lemon juice and pepper to taste. Sprinkle with cheese.
