Ingredients Directions
  1. Put oven on broil setting.
  2. Cut bread into 24 pieces and spray each side with olive oil cooking spray.
  3. Place on a cookie sheet, approximately 4 inches from heat, and broil for 2-3 minutes on each side.
  4. Spray a skillet with cooking spray and heat over medium heat.
  5. Add peppers, sliced onions, and garlic, and saute for 2-3 minutes.
  6. Add mushrooms; put a lid on top and cook for about 5 minutes, or until mushrooms wilt.
  7. Then add the basil and thyme, and cook until liquid is absorbed and mushrooms are soft, approximately 8-10 minutes.
  8. Stir in Parmesan cheese and balsamic vinegar.
  9. Divide the mushroom mixture between Bruschetta pieces and sprinkle each one with mozzarella cheese.
  10. Broil for 1-2 minutes, or until the cheese has melted. Serve warm.
