  1. Heat a cooking spray coated frying pan over medium heat. Cook carrots, pepper, celery, green onions, garlic, and jalapeno chili for 5 minutes.
  2. Mix in stock, lime juice, and cumin and let boil. Lower heat, place lid on pot, and simmer 10 to 15 minutes or until vegetables are soft.
  3. When ready to serve, top soup with tomato, cucumber, cilantro, and croutons.
