3 tbsp  olive oil
1 each  medium onions
10 oz  frozen chopped spinach
1 tsp  salt
4 oz  crumbled feta cheese
0 1/2 cup  cottage cheese
1 each  eggs
16 oz  phyllo pastry dough sheet
1 cup  Butter, unsalted
  1. In saucepan over medium, heat olive oil and slowly cook onion ,stirring often, until tender; about 5 minutes.
  2. Add spinach, salt, feta cheese, cottage cheese, and egg.
  3. Stir and cook until thickened, 5 - 10 minutes. Reduce heat to simmer.
  4. Preheat oven to 400°F.
  5. Melt butter.
  6. Unroll phyllo sheets one at a time on a flat surface. Brush each with unsalted butter. Cut into strips approximately 5 inches wide.
  7. Place 1 tablespoon onion, spinach, and feta mixture at one end of each dough strip.
  8. Fold end of strip over filling to form a triangle. Continue folding in triangles to form small, triangular stuffed pastry.
  9. Brush with unsalted butter. Repeat steps #5-7 with remaining phyllo dough.
  10. On large baking sheet, arrange stuffed triangles, bake 12 - 15 minutes, until golden brown. Serve warm.
