Arrange pineapple and red and yellow peppers on a cooking spray coated grill rack. Cook 3 minutes per side. Slice off stems and take out seeds from peppers. Chop pineapple and peppers into small cubes. Mix together pineapple, peppers, onions, cilantro, limejuice, sugar, ginger, jalapeno peppers, and chipotle chiles in a serving bowl. Combine well.
