Ingredients Directions
  1. Preheat oven to 375 degrees F.
  2. Lightly spray 13 x 9 x 2 inch baking dish with cooking spray.
  3. In a small bowl, mix the half and half and Alfredo sauce, then place half of the sauce at the bottom of the baking dish.
  4. Place 2 lasagna noodles lengthwise side by side, place a third noodle crosswise at the other end of pan.
  5. Evenly place spinach, 1 cup of sauce, and 1/4 cup of mozzarella on top of noodles.
  6. Layer another 3 noodles as in step 4, top with cauliflower, beans, ricotta cheese, Italian seasoning, and top with another 1/4 cup mozzarella.
  7. Top with remaining 3 noodles and sauce. Place roasted bell peppers on top, sprinkle with remaining 1/2 cup mozzarella. Cover with foil and bake until noodles are tender and it is thoroughly heated, about 45 minutes.
