1 1/2 lb  fresh green beans
1 cup  chopped walnuts
0 1/2 cup  olive oil
1 tbsp  fresh lemon juice
0 1/2 tsp  kosher salt
1 pinch  black pepper
  1. Boil a large pot of water with a dash of salt. Add beans to water and cook until soft, but still crunchy, about 3 minutes. Strain and dunk in a bowl of ice water.
  2. In a large frying pan, sauté the walnuts for 6 to 7 minutes until lightly browned. Move half the walnuts into a zip-top plastic bag and smash with a meat mallet or rolling pin.
  3. Mix together oil, lemon juice, salt, and pepper in a large bowl. Stir in the smashed walnuts, the remaining whole walnuts, and beans coating evenly. Serve chilled or at room temperature.
