1 cup  white all purpose flour
1 cup  whole wheat flour
1 1/2 tsp  baking soda
1 tsp  grated orange peel
1 tsp  ground cinnamon
0 1/4 tsp  salt
8 oz  low fat peach yogurt
5 oz  dried peaches
1 tsp  vanilla extract
0.3333 cup  peach juice
0 1/4 cup  honey
0 1/4 cup  canola oil
1 each  eggs
  1. Preheat oven to 375 degrees F. Use a nonstick muffin tin, or line 12 muffin cups with paper baking cups, or grease bottoms only of regular muffin tin.
  2. In a large bowl, combine first six ingredients, mixing well.
  3. In a medium bowl, combine all remaining ingredients, mixing well. Add to dry ingredients, stirring just until dry ingredients are moistened. Divide batter evenly among the muffin cups.
  4. Bake for 14-18 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan & serve warm. Makes 12 muffins.
