Ingredients Directions
  1. In a large soup pot, saute the onions in the oil for 5 minutes, until golden. Add the spices and cook for another minute.
  2. Add the split peas, water, sweet potatoes, and apples. Cover and bring to a boil. Lower the heat and and simmer for 40 minutes or until the peas are tender.
  3. In a bowl, combine the tomatoes, lime juice, and soy sauce. When the split peas are tender, add the tomato mixture.
  4. Puree the soup in a food processor, working in batches and adding more water if needed. Return the soup to the pot and gently reheat. Serve topped with nonfat yogurt and minced cilantro.
