2 tsp  cooking sherry
1 tsp  low sodium soy sauce
1 tbsp  vegetable oil
1 each  medium shallots
2 tsp  fresh ginger root
12 oz  Lettuce, bibb, fresh, leaf, medium
0 1/4 tsp  salt
1/2 tsp  sugar
0.125 tsp  black pepper
  1. Wash and fully dry lettuce.
  2. In small bowl, whisk sherry and soy sauce. Set aside.
  3. In wok or large skillet, heat oil over high heat; making sure it does not smoke. Add shallot and ginger, sauté quickly until shallot is tender, about 1 minute. Add lettuce and cook, stirring constantly, until lettuce is wilted, 1 or 2 minutes.
  4. Add sherry mixture. Season with salt, sugar, and pepper. Cook 30 seconds until lettuce is soft. Make sure lettuce stays bright green. Serve right away.
