9 oz  cheese filled tortellini
1 each  large green bell peppers
2 each  medium carrots
1 each  medium zucchini
12 each  Mushrooms, fresh, small
2 cup  fresh cherry tomatoes
Zesty Tomato Sauce

2 cup  unsalted tomato paste
1 tbsp  minced onion
1 tbsp  chopped parsley
1 tbsp  fresh oregano
1 tbsp  fresh thyme
1 pinch  salt and pepper
  1. Skewers
  2. Cook tortellini according to package directions and drain.
  3. Alternate 1 tortellini and 2 to 3 vegetable pieces on skewers. Serve with tomato sauce.
  4. Zesty Tomato Sauce
  5. Combine all ingredients except salt and pepper in small saucepan. Heat thoroughly, stirring often. Add salt and pepper, stir.
