Mix together ginger, salt, pepper, nutmeg, cinnamon, and allspice. Massage spices onto chicken thighs and let rest for 5 minutes.
Grease a nonstick frying pan with cooking spray and heat over medium-high heat. Arrange chicken in pan and cook 2 minutes per side of until golden and crispy. Pour wine over chicken, lower heat to medium low, place lid on pan, and let simmer for 5 minutes; chicken should be cooked through when finished. Serve sauce on the side or poured over chicken.
