Beans, pinto, mature, cooked
Juice, tomato, low sodium, canned
fresh lime juice
Sauce, worcestershire, low sodium
Salsa, thick & chunky, medium
small cucumber, peeled
fresh chopped celery
fresh chopped onion
chopped green bell peppers
Croutons, gourmet seasoned, serving
Using a food processor or blender, puree 2 cups beans, tomato juice, lime juice, and Worcestershire sauce until creamy. Spoon into a large bowl and stir in the rest of the beans, salsa, cucumber, celery, onion, peppers, and garlic. Cover and chill for 3 to 4 hours.
When ready to serve, stir avocado into soup and top with croutons.
