2 1/2 cup  fresh cherry tomatoes
1 each  cooking spray
0 1/4 cup  shallots, chopped
1 tsp  fresh thyme
1 each  medium garlic cloves
0 1/4 tsp  salt
0 1/4 tsp  black pepper
1/4 cup  shredded mozzarella cheese
  1. Mince garlic. Cut 1-1/2 cups tomatoes in half and set aside.
  2. Lightly coat large nonstick skillet with cooking spray and heat over medium.
  3. Add shallots, thyme, and garlic. Cook 2 minutes until shallots are tender.
  4. Add 1 cup of whole tomatoes and halved tomatoes, salt, and pepper. Cook and stir for 1 to 2 minutes until tomatoes are warmed. Remove from heat.
  5. Sprinkle with mozzarella cheese. Stir gently. Serve.
