Dry Ingredients

2 1/2 cup  Flour, white, unbleached, enriched
0 1/2 cup  brown sugar
1 1/2 tsp  baking soda
1 tsp  low sodium baking powder
1 tsp  ground cinnamon
0 1/2 tsp  ground cloves
0 1/2 tsp  cardamom, ground
0 1/2 tsp  ground coriander
0 1/4 tsp  salt
Wet Ingredients

1 1/2 cup  low fat buttermilk
0 1/2 cup  prune puree
2 tbsp  vegetable oil
  1. Preheat the oven to 350 degrees.
  2. Prepare an 8 inch loaf pan with a light coating of cooking spray or oil.
  3. Stir together the dry ingredients in a large bowl.
  4. In a separate bowl, combine the wet ingredients.
  5. Add the wet ingredients to the dry ingredients and stir until well mixed.
  6. Spoon the batter into the loaf pan and bake for about 1 hour, until the top is firm to the touch and a knife inserted in the center comes out clean. Tip out onto a wire rack to cool.
