Rinse and clean the potatoes and slice each into two equal pieces.
Prepare 6 squares of foil, big enough to fold in half over 1/2 cup of potatoes. Lay potatoes on foil squares and season each with olive oil, rosemary, thyme, wine, and paprika. Fold packets in half and seal.
Move to oven and bake for 30 minutes. Remove from oven and let rest for 5 minutes.
