2 cup  Peaches, canned, with extra light syrup, slices
0 1/4 cup  low sugar orange marmalade
0 1/4 tsp  ground nutmeg
0 1/4 tsp  ground ginger
0 1/4 tsp  salt
0.125 tsp  black pepper
6 each  boneless skinless chicken breasts
1 tsp  cornstarch
2 tbsp  cold water
  1. Save 1/2 cup of syrup from the can of sliced peaches, drain the rest, set the peaches aside.
  2. In a small bowl, mix the peach syrup with the marmalade, nutmeg, ginger, salt, and pepper; set aside.
  3. Spray a large nonstick pan with nonstick cooking spray and heat over medium high heat until hot, add in the chicken and saute until brown on both sides, about 5 minutes.
  4. Stir in peaches, add the marmalade mixture from step 2, bring to a boil.
  5. Cover and cook until chicken is thoroughly cooked, about 10 minutes.
  6. Remove only the chicken and place on a plate, keep warm.
  7. In a small cup blend the cornstarch and water then add to the pan with the sauce.
  8. Bring to a boil, and continue cooking until thick, stir constantly. Spoon over chicken.
