Arrange each breast in the middle of 2 layers of plastic wrap. Using a meat mallet or heavy skillet, compress to 1/4 inch thickness.
Douse chicken in bread crumbs, making sure to coat evenly. Place 1 tablespoon of cheese onto each breast and roll chicken up. Arrange breasts on a cooking spray coated square baking dish, in one layer. Lightly pour margarine evenly over breasts.
Bake in oven for 25 minutes or until cooked through.
Mix spinach and basil in a bowl. Top with vinegar and oil and season with pepper. Serve chicken on top of salad.
