1 each  cooking spray
1 tbsp  brown sugar
0 1/2 tsp  salt
0 1/2 tsp  ground cumin
0 1/2 tsp  ground coriander
0 1/4 tsp  ground red pepper (cayenne)
1 lb  Beef, top sirloin steak, raw
  1. Preheat oven to 450°F.
  2. Lightly coat 8" cast iron skillet with cooking spray and place in oven 5 minutes.
  3. In mixing bowl, combine brown sugar, salt, cumin, coriander, and pepper. Mix well.
  4. Massage seasoning onto surface of steak. Move steak to hot skillet.
  5. Return to oven and cook, uncovered, 7 minutes per side for medium rare, turning once.
  6. Remove from oven, move to serving platter, and allow to rest 5 minutes.
  7. Slice diagonally, across 'grain,' into very thin slices.
