4 each  medium garlic cloves
1 tbsp  unsalted butter
0 1/4 tsp  hot red pepper flakes
8 each  eggs
2 oz  cold water
0 1/2 tsp  salt
0 1/4 tsp  black pepper
1 tbsp  vegetable oil
  1. To roast garlic: Preheat oven to 350°F. Slice tops off garlic, wrap loosely in aluminum foil, bake for 20 to 30 minutes.
  2. In large bowl, whisk eggs, water, mashed garlic, salt, and pepper.
  3. In large, non-stick skillet, combine oil and butter. Heat over medium-high.
  4. Pour egg mixture into heated skillet.
  5. When eggs are set, fold omelet in half and remove from heat.
  6. Transfer to serving dish. Sprinkle with red pepper flakes to taste. Cut into 4 pieces. Serve.
