4 each  low carb tortilla (10-inch)
8 oz  low fat refried black beans
0 1/2 tsp  ground cumin
1 cup  nonfat shredded mozzarella
8 oz  liquid egg substitute
0 1/4 cup  fat free milk
0 1/4 cup  picante sauce
0 1/4 cup  fresh cilantro
1 each  medium limes
  1. Preheat the oven to 350 degrees F.
  2. Arrange the tortillas on a baking sheet and smear the beans evenly on top. Sprinkle with the cumin and cheese and bake for about 10 minutes.
  3. While the tortillas are baking, beat the egg substitute and milk in a bowl. Heat a nonstick skillet over medium heat, add the eggs, and heat for 2 minutes. Lift cooked portion with a spatula to let the uncooked portion flow underneath.
  4. Set the egg evenly on top of the tortillas, put the picante sauce and cilantro on top, and serve with the lime.
