4 each  whole loin pork chops
1 tbsp  vegetable oil
1 each  medium apples
1 lb  fresh carrots
1 1/2 lb  Sauerkraut, low sodium, canned
12 floz  Beer, can/btl, 12 fl ounce
0 1/2 cup  cold water
0 1/4 cup  packed brown sugar
2 tsp  caraway seeds
  1. Pat pork chops dry with paper towels.
  2. In a large nonstick pan, heat oil over high heat until very hot, add pork chops and cook until brown on both sides.
  3. While pork is cooking, coarsely grate 1/2 of the apple, then add to pork with carrots, sauerkraut, beer, water, brown sugar, and caraway seeds.
  4. Bring to a boil over high heat. Reduce heat to low, cover, and simmer 35 minutes.
  5. Cut remaining 1/2 of apple into wedges and add to skillet.
  6. Cook until carrots and pork chops are fork tender, about 10 additional minutes.
  7. Spoon juice from pan over pork occasionally while cooking.
