3 tsp  vegetable oil
4 each  boneless skinless chicken breasts
1 each  medium apples
1 each  small onions
1 1/2 tsp  curry powder
0 1/4 tsp  salt
0 1/2 cup  mango chutney
0 1/2 cup  Peas, green, sweet, frozen
0 1/2 cup  cold water
  1. In a large nonstick pan, heat 1 teaspoon of vegetable oil over medium high heat until very hot, add chicken and cook until golden brown, losing all of its pink color, about 4 to 5 minutes per side. Transfer to a plate and keep warm.
  2. Lower heat to medium and add the remaining 2 teaspoons of vegetable oil.
  3. Add in the apple and onion, saute until tender.
  4. Stir in the curry powder and salt, cook for 1 minute.
  5. Add the mango chutney, frozen peas, and water, and bring to a boil. Continue boiling for 1 minute, spoon over chicken and serve.
