1 tbsp  olive oil
0 1/2 cup  canned unsalted diced tomatoes
3 each  medium garlic cloves
1 cup  crimini mushrooms
0 1/4 cup  white wine
1 tbsp  dijon mustard
5 oz  fresh spinach leaves
15 oz  Beans, white, mature, canned
2 tbsp  oregano leaves
1 pinch  salt and pepper
  1. Pour the olive oil in a skillet and place over medium high heat. Saute the onions until they are translucent.
  2. Put the garlic and the mushrooms in the skillet and cook until aromatic. Add in the white wine and mustard.
  3. Place the spinach in, cover, and steam for about 3 to 4 minutes.
  4. Add in the white beans and continue cooking until heated all the way through. Season with oregano, salt, and pepper.
