2 oz  honey
0 1/2 tbsp  lemon zest
0 1/4 cup  fresh lemon juice
1 1/2 tbsp  extra virgin olive oil
2 tsp  poppy seeds
10 oz  fresh spinach leaves
1 each  medium celery stalks
2 each  medium peaches
8 oz  boneless skinless chicken breasts
1 cup  fresh raspberries
2 tbsp  chopped walnuts
  1. In small bowl, whisk honey, lemon zest, lemon juice, olive oil, and poppy seeds. Cover and refrigerate until ready to use.
  2. Thoroughly wash spinach, pat dry, and tear into small pieces.
  3. In medium salad bowl, mix the spinach, celery, peaches, chicken, berries, and walnuts.
  4. Drizzle dressing on salad, toss and serve.
