1 1/2 cup  white all purpose flour
1 1/2 cup  whole wheat flour
1 tsp  salt
0 3/4 cup  sugar
2 tsp  ground cinnamon
2 tsp  baking soda
2 tsp  low sodium baking powder
2 cup  shredded carrots
1.3333 cup  unsweetened applesauce
1 cup  Pineapple, crushed, with juice, canned
8 each  egg whites
2 tsp  vanilla extract
1 each  cooking spray
  1. Preheat oven to 375 degrees F.
  2. Mix the baking soda, baking powder, all purpose flour, whole-wheat flour, salt, cinnamon, and sugar.
  3. In a separate bowl, mix together the carrots, applesauce, pineapple, egg whites, and vanilla.
  4. Combine the pineapple mixture and the flour mixture, stirring until dry ingredients are just moistened.
  5. Spraymuffin tin with the nonstick cooking spray.
  6. Fill each muffin cup two-thirds full. Bake for 20 to 25 minutes.
