In a 4 1/2- to 6-quart slow cooker combine sausage, beans, undrained tomatoes, celery, sweet pepper, onion, wine, garlic, herbes de Provence, and the 1/2 teaspoon salt. Stir gently to mix. Place chicken on top. Sprinkle chicken lightly with additional salt and black pepper.
Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours.
Remove chicken from cooker. Spoon bean mixture into shallow serving bowls; top with chicken.
