1 1/2 lb  flounder fillet
2 tbsp  Butter, unsalted
1 cup  unsweetened pineapple juice
2 tbsp  minced onion
1 tbsp  pimentos
1 tsp  salt
2 tbsp  chopped parsley
0 1/2 tsp  curry powder
2 tbsp  fresh lemon juice
1 tbsp  packed light brown sugar
1 tbsp  cornstarch
  1. Preheat oven to 400 degrees F.
  2. Place fish in a baking pan and dot with butter, bake, uncovered until fish flakes easily with a fork, about 10 minutes.
  3. While fish is cooking, mix all of the remaining ingredients in a small pot, bring to a boil, and stir until thick, about 1-2 minutes.
  4. Serve fish with pineapple sauce on top.
