Ingredients Directions
  1. Heat 1 tablespoon of oil in a large pot over medium heat, add pork and brown, about 5 minutes.
  2. Add in the eggplant, onion, bell pepper, celery, garlic, and remaining tablespoon of oil, and cook until eggplant begins to brown, about 10 minutes.
  3. Stir in the flour, cinnamon, nutmeg, cumin, and curry, stir well for 1-2 minutes.
  4. Add in whole can of tomatoes with the juice, zucchini, beans, and raisins, bring to a boil.
  5. Reduce heat, cover, and simmer until meat is tender, about 10 minutes.
  6. Season to taste with salt and cayenne pepper (optional)
