Ingredients Directions
  1. In large pan, over medium heat, add oil and chicken. Cook 7 minutes per side, or until brown.
  2. Add onion and pepper, sauté, stirring occasionally, until vegetables are tender, about 5 additional minutes.
  3. In small pot, over medium-high heat, add broth, lemon juice, lemon peel, and oregano. Bring to boil.
  4. Continue cooking 5 minutes, until broth reduced to about 1/2 cup. Add broth to chicken.
  5. Reduce heat to medium-low and simmer additional 10 minutes until internal temperature reaches 165°F.
  6. Slice olives and set aside.
  7. Move chicken to serving plates, top with sauce and sliced olives.
