0 3/4 cup  unsalted butter
3 each  raw egg yolks
1 1/2 tbsp  fresh lemon juice
1 tbsp  cold water
1 tsp  dijon mustard
1 pinch  ground cayenne (red pepper)
1 pinch  salt
  1. In a microwave oven or in a pan over medium heat, melt butter.
  2. Combine egg yolks, 1 tablespoon lemon juice, water, and mustard in a blender. Blend on high speed.
  3. Slowly add butter. When emulsified, add the rest of the lemon juice, and cayenne and salt to taste.
  4. Blend for a few seconds until fully combined. Use immediately or store for up to 30 minutes in a warm place.
