2 1/2 lb  pork tenderloin
1 each  cooking spray
2 each  medium yellow bell peppers
1 tbsp  cajun seasoning
14 1/2 oz  canned unsalted diced tomatoes
16 oz  frozen sliced okra
1 pinch  hot pepper sauce
  1. Remove excess fat from meat. Cut meat into 1-inch pieces. Coat a large skillet with cooking spray and cook meat. (cook half at a time), in a hot skillet over medium heat until brown. Drain off fat. In a 3 1/2- or 4-quart slow cooker place meat and sweet peppers. Sprinkle with Cajun seasoning. Top with undrained tomatoes.
  2. Cover and cook on low-heat setting for 6 to 7 hours or on high-heat setting for 3 to 3 1/2 hours.
  3. If using low-heat setting, turn to high-heat setting. Stir in frozen okra. Cover and cook for an additional 30 minutes. If desired, pass hot pepper sauce.
