1 lb  boneless skinless chicken breasts
0.3333 cup  yellow cornmeal
1 tsp  chili powder
0 1/4 tsp  garlic powder
0 1/4 tsp  salt
1 tbsp  white all purpose flour
2 each  egg whites
2 tsp  vegetable oil
0 1/2 cup  salsa
  1. Flatten chicken to 1/2 inch thickness by placing between 2 sheets of heavy duty plastic wrap and hit with a meat mallet or rolling pin.
  2. In a small shallow bowl, mix the cornmeal, chili powder, garlic powder, and salt.
  3. Sprinkle flour evenly over chicken then dip in egg whites then cornmeal mixture to coat.
  4. In a large nonstick pan, heat oil over medium heat, add chicken and cook until done, about 5 to 6 minutes per side.
  5. Serve each chicken breast with salsa.
