1 lb  fresh spinach leaves
1 tbsp  sour cream
1 tbsp  olive oil
1/2 oz  pine nuts
1/2 tsp  minced garlic
.125 tsp  black pepper
  1. In large skillet, add pine nuts and toast over medium-high 2 minutes, stirring constantly. Transfer to small bowl and set aside.
  2. Wash spinach and drain well, leaving some water on leaves.
  3. Return skillet to cook top and heat to medium-high, add spinach and cook until wilted, about 3 minutes. Transfer to colander set over a bowl to drain. Wash and dry skillet.
  4. Return skillet to cook top, add oil and heat over medium-high.
  5. Add garlic and cook 30 seconds. Return drained spinach to skillet. Toss gently with sour cream. Season with pepper and sprinkle with pine nuts. Serve..
