1 each  Cauliflower, head, large, 6" - 7", fresh
0 1/4 tsp  salt
0 1/4 tsp  black pepper
0.6667 cup  vegetable broth
4 oz  Neufchatel cream cheese
0 1/2 tsp  ground thyme
2 oz  Cheese, cheddar, fat free, shredded
  1. Place cauliflower in a 4 to 5 quart slow cooker. Sprinkle with salt and pepper. Add vegetable broth.
  2. Cover and cook on low heat setting for 3 to 4 hours or on high heat setting for 1 1/2 to 2 hours.
  3. With a slotted spoon, transfer cauliflower to a serving plate.
  4. For sauce, add cream cheese and thyme to liquid in cooker, whisk until smooth.
  5. Spoon sauce over cauliflower. Sprinkle with cheddar cheese.
