3 each  fresh whole beets
3 tbsp  seasoned rice vinegar
2 tsp  soy sauce
0 1/2 tsp  sesame oil
6 oz  fresh baby spinach
1 tbsp  sesame seeds
  1. Mix uncooked beet sticks in a mixing bowl with 1 tablespoon rice vinegar, 1 teaspoon soy sauce, and 1/4 teaspoon sesame oil. Let stand at room temperature 15 minutes or up to 2 hours to marinate.
  2. When ready to serve, toss spinach in a large salad bowl with remaining rice vinegar, soy sauce, and sesame oil. Top spinach with beets and their marinade; sprinkle with sesame seeds.
