Prepare the Herb Rub by mixing the oregano, thyme, lemon pepper, garlic powder, onion powder, brown sugar, and salt in a small bowl.
Prepare the kabobs by rinsing the meat in cool water. Pat it with paper towels to dry. Cut the meat into thin 1/4-inch strips and place in a shallow nonmetal container.
Sprinkle the Herb Rub over the steak and toss to mix. Drizzle the olive oil over the steak and toss again.
Set aside for 15 to 30 minutes. If a more intense flavor is desired, cover and refrigerate for a maximum of 24 hours.
Thread one mushroom, a steak strip, and another mushroom onto each skewer.
Spray a large broiler pan with nonstick cooking spray and place the skewers on the pan. . Spray a light coat of olive oil cooking spray on the skewers and broil, turning occasionally, for approximately 8 minutes until the skewers are browned and the steak is done.
If grilling, grill over medium heat for 8 minutes.
