0 1/4 cup  low sodium soy sauce
1 tsp  italian seasoning
0 1/2 tsp  fresh ginger root
1 each  medium garlic cloves
24 each  fresh mushrooms (med)
1 each  medium onions
1 cup  fresh cherry tomatoes
0 1/2 each  chopped green bell peppers
0 1/2 each  medium red bell peppers
0 1/2 each  medium yellow bell peppers
1 each  cooking spray
2 cup  cooked long grain brown rice
1 tbsp  fresh oregano
4 pinch  fresh oregano
  1. In a small bowl combine soy sauce, Italian seasoning, ginger, and garlic; set aside.
  2. Thread mushrooms, onion, tomatoes, green pepper, red sweet pepper, and yellow pepper alternately onto (8-inch) skewers. Brush kabobs with soy sauce mixture.
  3. Place kabobs on a baking sheet coated with cooking spray. Broil 3 inches from heat (with electric oven door partially opened) 4 to 5 minutes, basting often with remaining soy sauce mixture.
  4. Combine rice and chopped oregano; spoon 1/2 cup rice on each of 4 individual plates, and place 2 kabobs on each serving. Garnish plates with oregano sprigs, if desired.
