1 tbsp  unsalted butter
1 lb  medium onions
2 each  medium apples
6 cup  low sodium chicken broth
0 1/2 tsp  ground thyme
1 pinch  salt and pepper
6 tbsp  shredded Swiss cheese
  1. Peel and thinly slice onions and apples.
  2. In large pot, over medium heat, melt butter.
  3. Add onions and apples.
  4. Cook, uncovered, until apples and onions are tender, stirring occasionally.
  5. Add broth, thyme, salt, and pepper. Bring to boil, reduce heat to simmer. Cover and cook 20 minutes, stirring occasionally.
  6. In 6 serving bowls, add 1 tablespoon cheese. Ladle hot soup over cheese, serve.
