8 each  chicken thighs
4 tbsp  olive oil
1 each  cooking spray
2 tsp  lime peel zest
4 tbsp  fresh lime juice
2 tbsp  fresh ginger root
2 tbsp  fresh cilantro
2 tsp  light honey
0 1/2 tsp  salt
0 1/4 tsp  ground cayenne (red pepper)
  1. Wash chicken under cool water and trim any excess fat. Pat dry.
  2. In small bowl, combine lime zest and juice, oil, ginger root, cilantro, honey, salt, and pepper.
  3. Place chicken in resealable plastic bag and pour lime mixture over it. Seal bag and turn to coat.
  4. Chill for 2 to 6 hours.
  5. Preheat grill to medium-heat or preheat broiler. Spray grill or broiler pan with cooking spray.
  6. Remove chicken from marinade. Discard marinade.
  7. Grill or broil chicken (if broiling, place close to heat source), turning just once, 15 to 20 minutes, or until juices run clear when pierced with a fork.
