5 oz  frozen chopped spinach
0 3/4 cup  fat free ricotta cheese
2 each  medium garlic cloves
1 tsp  dried basil
0 1/2 tsp  oregano leaves
2 tsp  olive oil
0 1/2 each  medium zucchini
0 1/2 each  medium red bell peppers
0 1/2 cup  fresh chopped onion
4 each  large whole wheat pitas
0.3333 cup  canned tomato sauce
0 3/4 cup  part skim shredded mozzarella
  1. Preheat oven to 400 degrees F.
  2. Mix the spinach, ricotta, garlic, basil and oregano in a medium bowl.
  3. Heat the oil in a large nonstick skillet.
  4. Stir in the zucchini, pepper, garlic and onion; cook until tender not soft, about 4 minutes.
  5. Place the whole-wheat pita breads onto a nonstick baking sheet.
  6. Spread 1/2 cup of the spinach/ricotta mixture over each pita.
  7. Top each with tomato sauce and then the cooked vegetables.
  8. Sprinkle the mozzarella cheese evenly over each and place in oven.
  9. Bake about 15 minutes until completely heated and cheese is melted.
