1 cup  oat bran
0 1/2 cup  Flour, pastry, whole wheat, stone ground
2 tsp  low sodium baking powder
2 tsp  sugar
1 3/4 cup  low fat buttermilk
0 1/4 cup  liquid egg substitute
1 each  cooking spray
  1. Mix the oat bran, flour, baking powder, and sugar in a medium-sized bowl.
  2. Add the buttermilk and egg substitute (or egg whites). Stir well with a wire whisk.
  3. Spray a large griddle or nonstick skillet with cooking spray. Preheat over medium heat.
  4. Pour 1/4 cup of batter onto the griddle or skillet and spread into a 4-inch circle for each pancake.
  5. Cook for about 1 ½ minutes until the top is bubbly and the edges are dry. Flip and cook for 1 minute until the second side is golden brown.
  6. Serve the pancakes hot or keep them hot until serving time in a 200 degree F preheated oven. If desired, serve with fresh fruit and a dollop of vanilla yogurt.
