Ingredients Directions
  1. Heat oil in a large nonstick pan.
  2. Add in onions, celery, and garlic. Cook until soft, about 5 minutes. Stir as needed.
  3. Add lentils, tomato sauce, broth, oregano, and 3 cups of water. Bring to a boil.
  4. Simmer on low flame, covered, until lentils are tender, about 45 minutes. Stir as needed.
  5. When lentils are soft, add in spinach. Cook 5 more minutes until spinach is heated through.
