Ingredients Directions
  1. In a 10-inch skillet, heat oil over medium heat. Cook onion and sweet potatoes in oil for 5 minutes, stirring gently, until brown.
  2. Then, reduce heat to low. Cover and cook 10 to 12 minutes stirring occasionally, until potatoes are tender.
  3. Add brown sugar and jerk seasoning and stir. Cook uncovered about 3 minutes, stirring until glazed. Sprinkle with parsley.
