Ingredients Directions
  1. Heat olive oil over medium high heat in a 4 to 6 quart Dutch oven, and then add chicken and garlic.
  2. Cook and stir 4 minutes or until outsides of chicken pieces are no longer pink. Remove chicken from pan using a slotted spoon.
  3. Add mushrooms to the same pan, and then cook about 5 minutes or just until tender, stirring frequently.
  4. Carefully add broth and water, and bring to boiling.
  5. Add tortellini, spinach, carrot, tarragon, and partially cooked chicken to broth mixture, then return to boiling. Reduce heat.
  6. Simmer, covered, for 7 to 9 minutes or until tortellini is tender, stirring occasionally. Stir in spinach (if using).
